It's very annoying to work with acoustic sounds in AT. Could we get something that is nearly identical to a synth but instead just spits out a fixed selection of sounds, like piano, guitar, violin, trumpet? I would love to be able to work with these sounds in the piano roll.

This sounds a lot like a sampler, which has been requested so many times that the AT team has explicitly stated somewhere that they don't want to receive any more sampler requests. But I feel you, we all do need samplers. There are makeshift setups that can be used in the meantime, most of which utilizing the Machiniste and Pitch Delay devices.
Those setups are so annoying that it's easier to just use real samples. Is there any progress on the sampler?
I believe we were told they are working on some sort of sampler, but it's not revealed yet. However, something close that we have so far is a device called Gakki which allows you to play real-world instruments, which is (i think) a step closer to the sampler and is exactly what you're looking for on the beta. I really recommend joining the Discord for updates to keep yourself updated!
